steamed romanesco cauliflower with lemony feta dip

After Christmas and New Year’s Eve feasts lets start the new year with something fast, light and easy to make. A salty and sour feta cheese dip, as a perfect match for fresh or steamed vegetables. I really like it with steamed romanesco cauliflower (isn’t it one of the most beautiful vegetables?!) – it’s both nice to eat and to look at 😉 Plus, it couldn’t be any easier to prepare!

STEAMED ROMANESCO CAULIFLOWER WITH LEMONY FETA DIP

Ingredients

250g Greek style feta cheese

2,5-3 tbsp lemon juice

5 tbsp olive oil

grated zest from one lemon

1-2 garlic cloves, minced

handful of fresh parsley 

pinch of chilli flakes or grated dry piri piri

Recipe

Bring about 1,5 l of water to a boil in a pot into which your steamer basket fits. Put trimmed and cleaned cauliflower florets in the steamer basket, set over the boiling water, cover, and steam until tender to the bite, about 4-6 minutes for crisp-tender florets.

Meanwhile, mix all the rest of the ingredients, except chilli flakes, in a blender until smooth. Transfer to a bowl with a splash of olive oil and a sprinkle of chilli flakes. Serve with the steamed cauliflower as a side dish for lunch or light dinner or with other fresh vegetables as a snack. You can also use baked potatoes, steamed zucchini, or fresh carrots.
