Hello everyone! Sorry for this short break in posting new recipes. I went on holidays to Spain and had the most amazing time! The weather was perfect, the cities stunning, beaches full of happy, relaxed people and restaurants packed with the most delicious food!

And the markets…Let’s talk about the markets for a moment. When I saw The Mercado Central in Valencia and La Boqueria Market in Barcelona I was lost for words. And I almost never am. The smells, colors, people, varieties of fresh products and even the interiors! I was in love. I wouldn’t mind living in one of those markets. No joke 🙂 You can find anything you wish for there. And then when you go to the streets not that much changes. The amount of green grocers was shocking to me. From little ones with small stands and sellers from all over the word to big ones designed in the most beautiful way. All of them had one thing in common. The varieties, freshness and colors of all the fruits, veggies and herbs was out of this world. Incredible!

When I got back home I didn’t know where to start with cooking in my kitchen again. Then I realized the sweet potatoes I bought before leaving started to grow little violet trees on them (I actually used them later as a decoration) so I decided to start with that. After I peeled them I thought – why not peel all the way down and create something like potato tagliatelle? This is what came out of it 🙂 The colors of this dish reminds me somehow of the vibrant streets of Spain. Please enjoy and whenever you get the chance – visit this stunning country!

SWEET POTATO PASTA WITH HERBS IN BUTTER SAUCE

Ingredients

(1 serving)

1 sweet potato, washed and peeled

1/2 red onion, finely diced

1,5 tbsp butter (I used vegan butter)

1 tsp coconut oil or olive oil

1 tsp dried sage

pinch of nutmeg

pinch of cinnamon

sea salt, fresh grounded pepper

fresh sage or few fried basil leafs – optional

Recipe

Shave the sweet potato with a vegetable peeler into thin stripes. Melt the butter in a sauté pan and add the coconut oil. Add the onions and sauté for 1 minute. Add the sage, nutmeg, cinnamon and stir. Next add the potato stripes and sauté, stirring from time to time, for about 6 minutes. You can add more butter if you like. Season to taste with salt and pepper. Serve sprinkled with chopped fresh sage or fried basil leafs, like I did, for an extra crunch and flavor. Enjoy, it’s really yummy! 🙂
