spinach & walnut pesto

I looove pesto. It’s so easy to make and I can use it in so many different ways! With pasta, potatoes, on pizzas, sandwiches or toasts (my fave!), in soups, as a dip or dressing. This Italian sauce has its origin in Genoa and is made from fresh basil leafs, crushed garlic, pine nuts, Parmesan cheese, olive oil and cheese made of sheep’s milk. But the ingredients vary depending on the region of Italy where the pesto is made. Sometimes tomatoes or grilled bell peppers are added to the sauce, pine nuts replaced with almonds, pecorino cheese used instead of Parmesan or no cheese is added at all. I bought fresh spinach and I had some walnuts from my friends’ tree waiting to be used in something special, so I decided to make pesto! I didn’t use cheese in this recipe but you can definitely add it if you want. If you are not eating cheese, you can add nutritional yeast for the cheese flavor or simply skip it, this pesto is already delicious without it 🙂 And please, stay tuned – soon I will share with you my yummy recipe for mushroom tart with this spinach-walnut pesto!

(for about 1,5 cup pesto)

4 cups fresh spinach

1 cup fresh basil

5 garlic cloves, peeled

1/4 cup walnuts, shelled

1/4 cup fresh lemon juice

1/3 cup olive oil

1/4 cup Parmesan cheese or 2 tbsp nutritional yeast – optional

1 tsp salt (use a little bit less than that if adding Parmesan cheese)

1/2 tbsp freshly ground pepper

pinch chilli flakes/ dried piri piri – optional

Pulse the garlic and walnuts in a food processor for about 30 seconds. Add the spinach and basil and pulse again until blended but still chunky. Add the rest of the ingredients and blend until it reaches the desired consistency. Add more olive oil or lemon juice if you want the pesto to be more runny. Season to taste and enjoy ! 🙂
