zucchini noodles with ginger, garlic and sesame seeds

Everyone knows I am a big pasta and noodles fan. There are endless ways to prepare it, it’s easily paired with a lot of ingredients, quick to cook and let’s be honest…simply delicious! So, since I want my meals to be plant based, I decided to have some noodles made of…zucchini! They came out really well! Filling, tasty and healthy at the same time 🙂 I recommend switching to this kind of ”pasta” from time to time 🙂



(2-3 servings)

3 medium zucchini, julienned

2 garlic cloves, thinly sliced

1,5 tsp fresh ginger, grated or finely chopped

1 tbsp olive oil

pinch of grated piri piri

1 tsp lemon juice + few lemon wedges for serving

1 tbsp sesame seeds (black or white)



Wash, dry and julienne the zucchini. You can also prepare it on a spiralizer or a mandoline slicer. Heat the olive oil on a skillet and sautée the garlic and ginger. Add piri piri (skip this if you don’t want it too spicy) and zucchini noodles, drizzle with lemon juice and sautée until tender. Don’t leave it on a heat for too long – the zucchini will become watery. Season with salt to taste. Sprinkle with sesame seeds and serve immediately with lemon wedges on the side.
