spiced pear popsicles

Have a few pears and some leftover apple juice? Cook a delicious spiced pear compote and freeze it as popsicles to say bye to the sunny summer and welcome the colorful fall. They taste very refreshing even on a rainy day 🙂

(for about 6 big popsicles)

3 pears – peeled and cored

200ml apple juice with elderflower (you can also use pear juice or apple juice of your choice)

3 cloves

a pinch of cinnamon and nutmeg

½ tbsp honey

1 tbsp brown sugar

a drop of vanilla extract

200ml yoghurt (I used plain Greek yoghurt but you can use any other that you like) – optional

Cut the pears into cubes and cover with the apple juice in a sauce pan. Add the cloves, cinnamon, nutmeg, honey, sugar, vanilla extract and bring to a boil over a medium heat. Cook for another 5 minutes and set aside. After the pear compote gets cool blend it. And now it all depends on your imagination. You can transfer the blended pears into popsicle containers just like it is or mix it with your favorite yoghurt. You can also make them a little bit more fun and do layers. One layer of plain yoghurt, one layer of pear mousse and one layer of a mix of yoghurt and pears. To make them even prettier and tastier – you can also put slices of fresh pears inside.
