orange curd

After doing this lemon curd, in which I absolutely fell in love, I decided to make one from oranges, for those who prefer sweet treats more than the sour ones. So here it is – sweet and yummy orange curd. Perfect with cupcakes, scones, muffins, pancakes and cakes. I really like it with crunchy waffles as an after lunch dessert. It´s not the most dietetic but well…everyone needs to spoil themselves from time to time, right? 😉 Enjoy!

zest from 2 oranges

juice from 1 orange

juice from ½ lime

120g butter

2 eggs

2 egg yolks

100g sugar (If you like your dessert very sweet you can add more sugar)

Combine sugar, orange zest, eggs and yolks and whisk until smooth. Add orange and lime juice and whisk again. Transfer to a heavy-bottomed sauce pan over a low heat and add butter. Heat, stirring constantly, until the mixture is thick. Let it cool and transfer to a jar. You can keep it in the fridge up to 2 weeks, but I don´t think it will still be there by that time 😉
