Imagine the smokiness of grilled bread, the freshness of ripe tomatoes, the beautiful scent of basil and the delicate, salty taste of Parmesan cheese… the ingredients speak for themselves so I will let them 😉 Ladies and gentlemen – Mrs. Bruschetta !
YELLOW TOMATOES AND RED BASIL BRUSCHETTA
(for 6 portions)
200g yellow tomatoes
6 slices of bread (with thick crust and firm consistency)
1-2 garlic cloves, peeled
fresh red basil
2 tbsp olive oil
1 tbsp balsamic vinegar
2 tbsp grated parmesan cheese
salt and freshly ground pepper
*I used yellow tomatoes and red basil but any other will work good as well
Chop the tomatoes and add to a bowl with 1 tbsp of olive oil, 1 tbsp of balsamic vinegar, chopped basil, a pinch of salt and freshly grounded pepper. Stir and let sit for about 10 minutes, this will make the tomatoes more flavorful and allow them to release some of their juices.
Meanwhile, drizzle the bread slices with the remaining olive oil and put them to a preheated grill or grill pan for about 2-3 minutes on each side. Remove the bread and rub one side with garlic, sprinkle a touch of salt on top. Stir the tomatoes one more time and taste them, correct seasoning if needed. Spread the tomatoes on each grilled bread slice with a splash of the leftover tomato juice. Serve with grated parmesan cheese and few basil leafs on top.
