Arugula, pear and almonds together? Sounds a little off? Try this refreshing summer soup and you will change your mind 🙂
In hot days like this I usually don´t feel like eating hot lunch so I grabbed some arugula, cucumber and very ripe green pear and I made this soup. It took me just few minutes to blend everything together and after chilling it for about 20 minutes I had my lunch ready. The peppery flavour of arugula matches the sweetness of pear perfectly so If you like healthy and fresh chilled soups you have to try this one!
CHILLED AURGULA SOUP WITH PEAR AND ROASTED ALMONDS
(for 1l of soup)
3 handful of arugula, chopped
1 medium cucumber, peeled and diced
½ of pear, peeled and diced
1 garlic clove, minced
5 spoons of greek yoghurt
1 tbsp of dill, chopped
1 tbsp of lemon juice
1 tbsp of olive oil
sea salt and freshly ground black pepper
Combine all the ingredients and purée them untill very smooth (I used blender). Add salt and freshly ground black pepper to taste. Refrigerate untill well chilled. Serve with a sprinkle of roasted almond flakes and a drizzle of olive oil. Bon apetit!
