This creamy soup will brighten up every meal and every table – it´s very green, fresh and yummy! Showing the flavour of the green peas in its purest form. And so easy to make! I recommend it to anyone who is craving soup but doesn´t have much time to prepare it.
CREAM OF PEA SOUP WITH CROUTONS AND GREEN APPLES
1l of broth
1kg of green peas
1 laurel leaf
100ml of sweet cream
Add the peas to a boiling broth with the laurel leaf and cook untill the peas are just tender.
Take the saucepan from the heat, take the laurel leaf out, add the cream and purée the soup with a blender untill completely smooth. Season with salt and freshly ground black pepper.
Done ! That simple 🙂
You can serve it with croutons and green apples chopped in cubes (just like me) or with a splash of crème fraîche and a sprinkle of fresh herbs like mint, basil, parsley or dill . Bon appetit !
