I wanted to start with something I truly love and I simply loove everything that is sour so…Lemon curd for a good beginning 🙂
Creamy, sour, thick…made from fresh, big and juicy portuguese lemons – perfect for an energetic start of a day with pancakes, cookies or as a cream for tarts and cakes. Delicious !
(for 1,5 glass of cream)
2 big eggs
2 egg yolks
160g sugar (I used brown sugar)
80g butter (unsalted)
zest and juice from 2 lemons
Mix the eggs, yolks and sugar together. Put on low heat and keep mixing. Add butter, lemon juice and zest. Keep mixing until it gets thick. Strain through a sieve into a jar. You can keep it in the refrigerator for 2 weeks.
So simple, so delicious !
You can eat it with yoghurts, cottage cheese, ricotta, pancakes, cookies or use it for tarts and cakes. Mniam ! / Want to try orange curd ? Check out this recipe 🙂
